Roasted Sweet Potato & Black Bean Quinoa Salad

I’ve been looking for some good quinoa recipes lately, and I found this one on Pinterest.
If you like quinoa, you have to try this! In addition to being super healthy and tasty, it’s so easy to make.

You could serve this cold as a light salad for lunch with some lettuce.
But I love making this for dinner when it’s still warm. It feels like comfort food, but it’s really healthy. For the dressing, you could add whatever you like ( lemon, olive oil, balsamic vinegar, mustard etc.. ). To make this dish extra creamy, I like to serve it with a delicious avocado dressing. Avocado’s are packed with healthy fats. It’s important to include healthy fats in every single meal as they will keep you fuller for longer.


● 2 sweet potatoes, chopped into cubes
● 1 tbsp olive oil
● 2 tbsp chilli powder
● 2 tbsp ground cumin
● 1 onion, chopped and diced
● 1 clove garlic, chopped
● 1 cup quinoa, well rinsed
● 2 cups water
● 1 can black beans, rinsed and drained
● Juice of 1 lime
● Handful of cilantro
● Salt and pepper to taste
● Avocado dressing

Avocado Dressing:

● 2 ripe avocados
● 3 tablespoons of apple cider vinegar
● 2 tablespoons of olive oil
● 2 tablespoons of water
● Juice of 1 lemon
● Salt and pepper to taste

Add all of the avocado dressing ingredients into a food processor and blend until it has a smooth and creamy consistency.

For the quinoa salad.
Toss the sweet potato in the oil, 1 tbsp chilli powder, 1 tbsp cumin ground, salt & pepper  and place it on a baking sheet. Cook in the oven ( 200°C ) for about 30minutes or until soft and tender.

Meanwhile, heat the oil in a saucepan over medium heat. Add the onion and cook until soft, about 7 minutes. Then add in the garlic, chilli powder and cumin ground.
Cook until fragrant, about 1minute.

Add the quinoa and water, bring to a boil reduce the heat and simmer until the quinoa is tender and the liquid has been absorbed, about 15-20 minutes. Mix the beans and sweet potato into the quinoa and season with lime juice salt and pepper to taste.
Mix in the cilantro and pour the avocado dressing on the salad.
