Butternut & Red Lentil Stew


I came up with this delicious recipe today.
I wanted to use butternut and red lentils. So I decided to make a Butternut and Lentil Stew. It’s the easiest dish to make, it only takes a few minutes to get everything ready and then you just need to let it cook in the oven for about an hour.
So there isn’t much to do! 

Butternut is so good for your skin and hair because of it’s high Vitamin A content.
One serving of butternut provides 50% of the required Vitamin C intake for the day!

You don’t have to use red lentils, you could use any type of lentils.
But I thought red lentils would go really well with butternut.

I served this with quinoa and it was such a good combination.
You could also serve this with rice, couscous etc.


• 1/2 and 1/4 cup red lentils
• 1 large butternut
• 1 can coconut milk
• 1 can chopped tomatoes
• 1 teaspoon ground ginger
• 1 teaspoon ground cumin
• 1 teaspoon paprika
• 1 teaspoon turmeric
• Salt and pepper to taste


Preheat your oven to 180°C. 

Start by chopping your butternut into cubes.
Add your coconut milk, chopped tomatoes and spices into an oven safe dish.
Heat this on medium-high heat on the stove, when it starts to boil you can add in the lentils and butternut.

Take the dish of the heat, cover it and place it in the oven for about an hour.
Garnish with coriander or parsley.
