Oat Muffins


Who doesn’t love muffins? They’re just so comforting..
But unfortunately, they’re usually full of refined sugars which are so bad for you.

So if you really love muffins, you can simply make healthier ones!
The recipe I’m sharing with you is very simple.
Whenever you find a muffin recipe, have a look at the ingredients.
Just because some of the ingredients aren’t healthy, doesn’t mean you can’t give the recipe a try. You can just replace these unhealthy ingredients with healthier ones.

For example, you could replace refined sugars with raw honey or natural maple syrup.
Replace butter with coconut oil. Basically anything you can think of.


• 1 cup rolled oats
• 1 cup chopped dates
• 1 cup hot purified water
• 1/2 cup chopped pecans or walnuts
• 2 eggs, beaten
• 1 cup purified water
• 1/4 cup coconut oil
• 1/4 cup raw honey
• 1/2 cup oat flour
• 1 cup chickpea flour
• 1 tsp bicarbonate of soda
• 1 tsp salt


Pre-heat your oven to 180°C.

Soak the oats and chopped dates in 1 cup hot water for 15 minutes.
Add the nuts, eggs, water, coconut oil and honey. Stir well.

Stir the rest of the dry ingredients into the wet ingredients and mix well to combine everything together.

Grease a muffin pan and place the batter into each individual muffin mould.
Bake for 25-35 minutes or until the muffins spring back when touched with your finger.

Leave the muffins to cool down for a few minutes.
