Zucchini Noodles with Mushroom Tomato Sauce (Vegan)


I was inspired to do this recipe by Deliciously Ella.
I love her blog, I find so many recipes there. I tried a few of them already and they were all so good and tasty!  

Zucchini noodles are a great way of getting your greens into a meal.
It’s simple and you can serve it with anything you like.
The original recipe from Deliciously Ella was served with a mint avocado dressing but I wanted a nice mushroom tomato sauce. So here’s the recipe:


For the Noodles:
• 2 large courgette

For the Sauce:
• 1 can chopped tomatoes
• 2 cloves garlic
• 1 onion
• handful fresh basil
• 1 tsp oregano
• 250 g white button mushrooms
• 1 tablespoon olive oil


Start by making your zucchini noodles using a spiralizer.
Once you’ve made your zucchini noodles, get started with the sauce.

Heat the olive oil in a large saucepan on medium heat, then add the onion and garlic.
Cook for about 7 minutes or until soft. Add the canned tomatoes, oregano, basil and season with salt and pepper. Bring to a boil, then lower the heat and simmer for about 20 minutes.

Then add the chopped mushrooms and cook for an extra 5 minutes.
Pour the sauce onto your zucchini noodles and garnish with some fresh basil.
