Vegan Red Lentil & Broccoli Stew


I’ve been making the same recipes over and over for the past week which is quite boring. So I decided I was going to make something different for dinner tonight!
I made this delicious red lentil and broccoli kind of stew and it was perfect since it was cold and rainy outside, it definitely warmed me up! This is a very basic recipe, feel free to add any of your favourite vegetables and spices and let me know what you used in the comments down below 🙂


• 1 cup dry red lentils
• 1 tablespoon olive oil
• 1 onion
• 2 cloves garlic
• 1 tablespoon minced ginger
• 1-2 tablespoons curry powder
• 1 teaspoon turmeric
• 1 teaspoon ground cumin
• 1 1/2 tablespoons ground coriander
• 5-6 cups vegetable stock
• broccoli florets ( as much as you want )


Start by chopping the onion into thin slices, then mince the garlic and ginger.
Heat the olive oil in a large saucepan over medium heat and add the onion and garlic.
Cook for about 7 minutes or until soft then add the ginger, curry powder, turmeric, ground cumin and ground coriander. Cook for an extra 2 minutes.

Add the red lentils, broccoli florets and vegetable stock.
Bring to a boil, then cover and simmer for 25-30 minutes.

Garnish with some fresh coriander.
