I’ve been wanting to make a banana bread for a while now and since I had 3 very ripe bananas I thought it was the perfect occasion!
Banana bread usually isn’t very healthy because it contains lots of extra refined sugars, so this is a much healthier version, definitely guilt-free. This is a vegan recipe.
I’m not a vegan myself, but I found this recipe and decided to just stick with it and not change too much of the ingredients since I never made a banana bread before.
If you don’t feel like doing the vegan recipe, you can replace the chia seeds and water with one egg.
This is the best banana bread I’ve tasted, it’s so moist and delicious!
The banana flavour brings so much sweetness, you have to try this.
• 3 very ripe bananas
• 1 tbsp chia seeds + 3 tbsp water
• 1/2 tsp vanilla extract
• 3 tbsp melted coconut oil
• 1/4 cup packed brown sugar
• 1/4 cup coconut sugar
• 1 tbsp raw honey
• 3 tsp baking powder
• 1 tsp cinnamon
• 3/4 cup coconut milk
• 1/2 tsp salt
• 1 1/4 cup rolled oats
• 1 cup almond meal
• 1 1/2 cup flour (I used 1 cup whole wheat & 1/2 cup white)
Preheat your oven to 180°C and line a loaf pan with baking paper.
Combine the chia seeds with the water, whisk it with a fork and set aside for 15minutes.
Mash the bananas with a fork in a large bowl, then add all the ingredients until the oats and whisk until combined.
Add the oats, almond meal and flour to the bowl and whisk until combined.
Bake for 1h – 1h10min or until golden and cracked on top.
Remove from the oven and let it cool down for at least 1hour or else it will crack and become crumbly.
