I made these cookies a while ago, but I just remembered how delicious they were so I’m going to share the recipe. It’s originally Karlie Kloss who made this recipe, but I changed a few of the ingredients and tried to improve it a little.
For those of you who want to make these cookies even healthier, you could replace the chocolate chips with some raisins or any dried fruit that you like most.
The recipe that Karlie made is gluten free, but I don’t bother making mine gluten-free.
If you want to make these cookies gluten-free then just replace the rolled oats by gluten-free oats, that’s it!
So here’s the recipe:
• 2 cups almond flour
• 1 cup rolled oats
• 1/2 tsp salt
• 3/4 tsp baking soda
• 1/2 tsp xantham gum
• 1/4 cup slivered almonds
• 3/4 cup dark chocolate chips
• 1/2 cup coconut oil
• 1/4 cup raw honey
Preheat your oven to 150°C and line a baking tray with baking paper.
Lightly toast the almonds in a frypan.
Gently mix the dry ingredients together, then add the liquid ingredients and mix well until combined.
Make small balls and place them on the baking tray. Flatten them with your hands.
Bake for 20-25 minutes or until golden brown.
Let them cool completely before eating them!
