These are the perfect healthy snack! They’re crunchy and naturally sweet.
They’re not like any other bars you would buy in a shop because they don’t have all these added processed sugars. They contain natural sugars and healthy fats.
I find them perfect as a pre/post-workout snack as they give you lots of energy.
I’ve been trying to make some healthy bars for a few days now and after many trials I finally got the consistency and taste I was looking for.
You can store these in an airtight container in the fridge or in the freezer for about 1-2 weeks.
• 1 cup pitted medjool dates
• 1/4 cup raw honey
• 1/4 cup natural peanut butter
• 1/2 cup almonds (roughly chopped)
• 1/2 cup pecans (roughly chopped)
• 1 1/2 cups rolled oats
Process the dates in a food processor until it forms a “dough” like consistency.
If the medjool dates aren’t sticky enough, soak them in water for 15 minutes before processing them.
Toast the oats and nuts in a 180°C preheated oven for 10-15 minutes.
Place the oats, nuts and dates in a bowl and set aside.
Melt the honey and peanut butter in a saucepan over low heat.
Once melted, add them to the oat mixture and mix well so everything is coated.
Transfer to a small dish lined with parchment paper so they lift out easily.
Press down until uniformly flattened.
Cover with plastic wrap and let sit in the fridge for at least 20 minutes.
Remove them from the dish and chop into even bars.
