Fig & Walnut Salad


I usually eat salads for lunch everyday, but I like to change up the ingredients from time to time just so I don’t get too bored with eating the same things over and over again.

This salad is super healthy, it has loads of healthy fats from the walnuts and avocado and also natural sugars from the figs and tomatoes.

It’s hard for me to actually give a recipe for this salad with all the measurements because I don’t measure how much of each ingredient I put in the salad, it changes everyday. But I will try be as accurate as possible.


• 2-3 handfuls lettuce
• 6-8 cherry tomatoes
• 1/2 avocado
• 1 small carrot
• 1/2 small red bell pepper
• 1 handful of walnuts
• sprinkle of feta
• 1 fig
• small handful coriander
• Salt & Pepper to taste


• 3 tbsp olive oil
• 1 tbsp vinegar
• 1 tsp whole grain mustard


Start by placing the lettuce in the center of your plate.
Cut the cherry tomatoes in half, slice the avocado, chop the red bell pepper into small slices, grate the carrot, roughly chop the walnuts, cut the fig into quarters and simple add all these on top of the lettuce. Then sprinkle some feta and finely chopped coriander, season with salt and pepper.

For the dressing, simple mix all the ingredients together and serve on the salad.
